My Favorite Jewish Chicken Soup This is my absolute favorite recipie for making chicken soup. I have others, but this is the one everyone likes. Oh yes, recent research is showing that there actually are some anti-viral, medicinal properties to chicken soup. 8-10 chicken soup cubes 1-2 pieces of chicken (in a pinch, you can use some of the skin with the chicken fat) 1-1 1/2 bunches celery, sliced 1-2 bunches carrots, scraped and sliced (or bags of baby carrots) 1-2 very large onions, diced 1 bunch parsley, minced 1 bunch celantro, minced 1 ginger root (diced finely) water per soup cube directions plus some for evaporation while cooking Bring water to a boil. Add chicken pieces, carrots, celery and ginger. Let cook until chicken is done and celery is nearly tender. Add parsley and celantro. Cook until celery is tender. Matzoh balls can be added to soup for Passover or any other time. |
